Directions

Preheat oven to 375 and grease a medium baking dish with cooking spray. In a small bowl, whisk together butter, brown sugar, granulated sugar, and cinnamon. Slice top off of each apple and scoop out the core. Looking downward where the core used to be, use a paring knife to make two circular cuts, downwards toward the bottom of the apple, but not all the way through to the bottom (keep some of the apple flesh uncut to keep things intact). One circular cut around the core and another between that cut and the outer skin. Next, place apple cut side down and make a series of cuts from the bottom of the apple (through the skin) all the way down to the cut side, being careful NOT to cut all the way through to the missing core. Place cut apples in a small baking dish (cut side up). Fill each apple with two caramel squares, then brush melted butter and sugar mixture on top. Bake until the apples are tender, about 30 minutes. Serve warm with a scoop of ice cream and drizzle with caramel.
