Turkey Hill Chef Barberet Crème Brulee Recipe
- 4 cups cream
- 2.5 cups milk
- 1 cup granulated sugar (plus extra sugar for caramelizing)
- 1.5 vanilla bean pods
- 15 egg yolks
Step 1: Start by adding 4 cups of cream, 2.5 cups of milk, and 2/3 cups of sugar together. Step 2: Prepare 1.5 vanilla beans by scraping the vanilla seeds from the vanilla pods. Step 3: Add vanilla seeds to your cream, milk, and sugar. Then add the vanilla pods. Step 4: Turn on your stove to 165 degrees Fahrenheit and bring your mix to a boil. Step 5: Add pre-blended egg yolks and 1/3 cups of sugar together. Step 6: Then blend all together. Step 7: Add the cream, milk, and sugar mixture to your egg mix. Step 8: Add your mix to molds. Step 9: Torch each mold to get rid of bubbles. Step 10: Put in oven at 190 degrees Fahrenheit for 35 minutes. Step 11: Take out of oven. Step 12: Add sugar to the top of your almost completed Crème Brulee. Make sure it evenly spreads on top. Step 13: Now torch the sugar to caramelize the top. Tip: Rest at room temperature before refrigeration for 1 hour.
